Yam and Jalapeño Vegetable Fritters

Spiced Yam, Carrot, Jalapeño, Scallion, and Garlic Fritters

These are not your basic veggie cakes. They are made with warm, fragrant spices like yellow curry, paprika, ginger, coriander, cumin, and turmeric. But, you could season them anyway you want.

Ingredients:
• 1.5 Cup Peeled, Grated Yam
• 1 Peeled, Grated Carrot
• 2 Large Green Onions, Julienne
• 1 Jalapeño, De-seeded and Chopped
• 1 Clove Garlic, Chopped Fine
• 1/2 tsp. Salt
• 1/4 Cup AP Flour
• 2 Eggs, Beaten
• 1/2 tsp. Blended Spices (curry, paprika, ginger, coriander, turmeric, cumin, black pepper)
• Vegetable Oil

Directions:
1. Add yam, carrot, jalapeño, scallion, garlic, and salt to a medium mixing bowl.
2. Allow the salt to pull the moisture from the veggies for 10 minutes, then move ingredients into a clean towel and squeeze out excess moisture.
3. Move ingredients back to bowl, and add flour, beaten eggs, spices, and a large pinch of salt. Stir with a fork until combined.
4. Heat a small layer of oil in a large skillet over medium heat.
5. Using a spoon, scoop small amounts (size of a silver dollar) of fritter mixture into pan. You should be able to make 6-8 fritters at one time.
6. Once fritters are golden brown on one side, flip and cook on remaining side.
7. Serve hot with chilled cucumber raita and fresh herbs.
