Blackberry Cobbler

What Summer dreams are made of..

I adapted this recipe from @thepioneerwoman, and I say adapted because halfway through the recipe I realized she used self-rising flour instead of AP (all-purpose). So I made it my own by adding baking soda to leaven the flour, and I added vanilla, cinnamon, and lemon zest for a little extra flavor.

Ingredients:
• 1/2 Stick Melted Butter, Plus 1 Tablespoon Chilled Butter for Greasing Pan
• 1 Cup Sugar, Plus 2 Tablespoons Extra
• 1 Cup Milk
• 1 Cup AP Flour
• 1/4 teaspoon Baking Soda
• 1/2 teaspoon Cinnamon
• 1/2 Lemon, Zested
• 1/2 teaspoon Vanilla Extract
• 2 Cups Fresh or Frozen Blackberries
• Fresh Whipped Cream or Vanilla Ice Cream

Directions:
1. Grease a 3-Quart Pan with Butter, and Pre-heat oven to 350 degrees.
2. In a medium bowl, mix flour and baking soda together. Then add sugar, milk, melted butter, cinnamon, lemon, and vanilla into the bowl and whisk until smooth.
3. Pour batter into baking dish.
4. Rinse blackberries, pat dry, and disperse evenly over cobbler batter.
5. Bake cobbler on middle rack of oven for about one hour until golden brown and bubbling. *When 10 minutes of cook time remains, sprinkle lightly with 2 tablespoons remaining sugar.*
6. Serve warm or chilled with whipped cream, or ice cream.
