Buffalo Smashed Potatoes

This is a quick side that requires NO oven. You can make them right on the stove top. Perfect for an after school, or anytime, snack.

Ingredients:
• 1 Pound Baby Potatoes (or more)
• 1 Tbsp. Olive Oil
• Buffalo Sauce (I used Frank’s Red Hot)
• Garnish: Scallion, Sour Cream, and/or Blue Cheese Crumbles

Directions:
1. Put baby potatoes into a medium sauce pot and cover with hot water.
2. Place pot on stove top over high heat and wait until boiling.
3. Once boiling reduce heat to low and simmer potatoes for 7-10 minutes, until you can pierce them easily with a knife.
4. Drain potatoes. Add potatoes to a plate or sheet tray, then take another plate or sheet tray and press down over the potatoes. This will smash them.
5. Heat a large skillet over medium heat and add 1 tbsp. olive oil.
6. Add potatoes to skillet and grill on each side for about a minute until golden brown.
7. Toss grilled potatoes in Buffalo sauce. Serve with scallions and/or a dollop of sour cream/blue cheese crumbles. 🔥
