Vegan Crab Cakes

First of all, what? How can a crab cake be vegan?

Well you can't make a vegan crab cake with crab, but you can make it with Heart of Palm. The recipe and flavors are exactly the same as you would have with your regular crab cake. And bonus for my thrifty friends, heart of palm costs about a quarter of the price of lump crab meat.

Ingredients:
• 1 Cup Heart of Palm
• 2 Tbsp. Celery, Chopped
• 1 Tbsp. Onion, Chopped
• 1/2 Jalapeño, Chopped
• 1 Fresno Chile, Chopped
• 2 Tbsp. Panko Breadcrumbs
• 1 Tbsp. Mayo
• 1 tsp. Dijon
• Lemon Zest
• Old Bay

Directions:
1. Add all ingredients to a bowl, and with gloved hands or the back of a spoon, mash heart of palm until broken apart, and resembling shredded crab. Then, mix all ingredients together until combined.
2. Using a ring mold shape each cake to desired size, I wouldn't recommend larger than a tennis ball.
3. Heat a pan over medium heat with grape seed oil (or other high heat oil) and grill each cake for one to two minutes on each side until golden brown.
4. Serve with your favorite crab cake sauce, remoulade, or whipped avocado like I did here.
5. Sprinkle with Old Bay and get blown away.
